Ingredients: 1 loaf bread (any type you prefer; I use whole grain white) 1 stalk celery 1 large onion 1/2 c. butter 4 c. (approximately) turkey or chicken stock 3 eggs 3-4 tbsp. seasoned salt 2 tsp. poultry seasoning

Directions:Preheat oven to 300º
Cut bread into half-inch cubes. Spread in large roasting pan sprinkle with seasoned salt. Bake until slightly brown, dry and crispy (like croutons).
While bread is baking, chop onion and saute in butter until translucent. Chop celery and add to onion mixture. Continue to saute until tender.
Add chicken/turkey stock until 1 inch above vegetables (I prefer "Better than Bouillon" paste mixed with water). Simmer for 10 minutes to blend flavors.
Just before stuffing turkey, place bread crumbs in a large bowl and add vegetable/broth mix, eggs and poultry seasoning. Stir until well-blended (add more broth if necessary) and stuff turkey. Begin cooking turkey immediately.
Place any leftover stuffing in casserole dish and bake at 350º for 30 minutes. |

Notes: I have been making this recipe for 30 years. I usually prepare the bread crumbs and vegetable/broth mixture the day before and store the bread crumbs in a plastic bag and refrigerate broth mixture. Be sure to heat broth mixture before mixing with bread crumbs. Stuff turkey and begin cooking immediately.
