2 # lean beef.
2 tbsp cornstarch.
2 tsp sugar.
1/2 tsp Accent.
5-6 tbsp soy sauce.
1 tbsp dry sherry.
2 medium or 3 small green peppers.
4 tbsp veg. oil, divided (prefer peanut).
1 tsp salt
1-4 garlic cloves, crushed (according to taste desired).

Directions:

Cut beef across the grain into slices about 2" long, 1/4" thick.

Combine cornstarch, sugar, Accent, and blend with soy sauce and sherry. Mix with sliced beef and set aside.

Cut peppers into 1 1/2" pieces.

Pour 2 tbsp of oil into skillet or wok; set over high heat.

Add salt, then green peppers. Stir constantly until peppers turn a darker green, about 1 minute.

Remoe green peppers, leaving as much oil in skillet as possible; spread peppers out on plate.

Add remaining oil to skillet with crushed garlic.

Stir in beef mixture. Cook stirring constnatly, about 2 minutes.

Add green peppers; mix well.

Serve with fluffy rice.
