4 eggs
1 c. half-and-half
1/2 cup mayonnaise
2 tbsp. flour
1/3 c. minced onion (dry or fresh)
pinch of garlic salt
8 oz. shredded cheddar or Gruyere cheese
1 pkg. frozen chopped spinach, defrosted
1 cooked and finely chopped chicken breast
may also used broccoli, mushrooms, peppers or other veggies
1 (9-inch) unbaked pie shell

Directions:

Preheat oven to 350º

Whip eggs, half-and-half, mayonnaise and flour in a medium mixing bowl. Add remaining ingredients and stir until evenly distributed.

Pour into an unbaked 9-inch pie crust. Bake for 45-60 minutes until top is golden brown and egg is thoroughly cooked.
