2 cups quick Oatmeal
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup butter
1/2 cup margarine
1 cup white sugar
1/2 cup buttermilk

Directions:
Directions:
fHeat oven to 350 F. Cream sugar, butter and margarine together, add dry ingredients alternately with the buttermilk. Mix the dough well, chill in fridge 1 hour. roll dough thin, cut into circles, and bake on cookie sheet for 10 minutes. cool on wax paper or rack.
DATE FILLING:
3 cups dates, chopped
1/4 cup sugar
1 1/2 cup water
Mix these 3 ingredients and cook until thick, stirring constantly, so they don't burn. About 10 minutes. Cool and spread filling on the wrong side of a baked cookie and top with another cookie, to make a sandwich. They can be served plain also.
