For cake:
1 c. vegetable or canola oil
4 eggs
2 c. granulated sugar
2 1/2 c. flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. vanilla
2 tsp. cinnamon
3 c. grated carrots
1 c. chopped walnuts (optional)

For cream cheese icing:
1/2 c. butter
1 lb. powdered sugar
8 oz. cream cheese
1 tsp. vanilla

Directions:
Directions:
Preheat oven at 350

Combine sugar, oil and eggs; mix well. Add dry ingredients and mix well, then add carrots and nuts.

Bake at 350 for 45-60 minutes.

For cream cheese icing:
Mix cream cheese and butter. Add powdered sugar to desired consistency. Add vanilla.
