1-2 lbs. ground turkey (or beef); quantity as desired
2 tbsp. olive oil
1 large yellow onion, chopped
2-4 large celery stalks, chopped
5 large carrots, chopped
1 package frozen corn
2 cans (14.5 oz each) stewed or diced tomatoes
1 can (15 oz) tomato sauce
2 cans (15-16 oz each) kidney beans, drained
2 cans (15-16 oz each) black beans, drained
1 heaping tsp. "Better than Bouillon" (chicken or vegetable) dissolved into 2 cups water
OR 1 can (14.5 oz) chicken or vegetable broth
4 tbsp. chili powder
2 tbsp. garlic powder
1-2 tbsp. cumin
1 tbsp. dried thyme
1 tsp. oregano
(if you prefer your chili spicy: 1 tsp. cayenne pepper, or more to desired taste)

In a large pot over medium heat, cook onion and turkey in olive oil until onion becomes translucent.

Add carrots and celery and saute until vegetables begin to soften, approximately 5 minutes.

Add spices and toast until aromatic.

Add broth, tomatoes (stewed and sauce), beans and corn. Bring mixture to a boil.

Reduce heat and simmer until mixture thickens (approximately 15 minutes).

Test consistency and flavor of sauce; add spices if needed.

Let sit for at least 2 hours (for best flavor and consistency)
