4 filets red fish or other white fish
3 T oil
2 T plain flour
2 T choped onion
1 can pureed tomatoes
1 clove garlic pressed
1/2 t garlic salt
1/2 t onion salt
1/4 t cayenne pepper
1/4 t allspice
1 T kitchen bouquet
1 med chopped banana pepper
1 T white wine
14.5 oz fish stock or chicken broth

Directions:
Directions:
Make a roux with oil and flour then add onion to roux and cook til oinion is softened. Pour in broth and add water til iron skillet is half full. Chop pepper in food processor with tomatoes. Add to broth along with seasonings to skillet and bring to a boil then turn to simmer and cook for 25 minutes. Add fish filets and continue to simmmer til done apprx 20 minutes. Correct seasonings and serve over rice.
