Ingredients:  
Place sugar in a pan on med heat. Add 1/4 c almonds on top, watch closely or it will burn, stir to coat and become caramelized. ( you can also use pecans) Remove from heat and place on wax paper to cool. Take romaine lettuce and tear to bite size. Place in nice serving bowl. Add chopped green onions or purple onions sliced in thin rings. 1 red sweet pepper sliced in rings. Add 1 can of sliced water chestnuts, optional. Drain 1 can of mandarin oranges and put in top. Add sliced avocado's.

Now make and pour over all with Vickie's vinaigrette.
In a blender:
1/4 c Rice or Tarragon vinegar ( no white or cider)
1/4 c sugar
1/3 c oil ( best if you slowly add the oil while blender is going add a dash of tobacco sauce.
