2 Tbsp cooking oil
1-1/2 cup buttermilk
1/4 cup corn meal
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
2 tsp sugar
1/2 tsp salt
2 Tbsp non-fat dry milk (optional)

Directions:
Directions:
Beat egg. Add the other ingredients and mix just until blended. The batter will be slightly lumpy. Spoon onto a preheated (medium) lightly oiled frying pan or griddle. Make 2 to 3 inch diameter cakes. Cook until the top surface is full of bubbles, and the bottom is lightly browned. Turn and brown the other side briefly.
