1 28 oz. can whole roma tomatoes, drained
3 c. tomato juice
2 c. chicken stock
15 or more fresh basil leaves
1 1/2 c. heavy cream
3/4 c. unsalted butter, cut into pieces
1/2 t. salt
1/2 t. fresh pepper

Directions:
Directions:
Combine tomatoes, juice and stock in soup pot. Simmer 30 minutes. Add basil.

Transfer in batches to blender and blend till smooth. Return to pan over low heat. Whisk in cream, butter, salt and pepper. Whisk until butter is melted and soup is thoroughly heated.

Garnish with parmesan cheese.
