3 cups canned black beans
3 tbsp minced garlic
1 pound ground turkey breast
1/2 onion, diced small
12 enchilada sauce
5 oz low fat cheddar cheese
2 tbsp diced cilantro

Directions:
Directions:
Saute turkey with onions and garlic until cooked. Set aside. Spray 9 x 13 pan with Pam. Line bottom with cut up tortillas. Layer with 1/2 turkey mixture, 1.2 beans, 1/3 sauce and 1/2 cheese. Repeat. Finish with sauce over top. Cover and bake until cheese melts and sauce bubbles....about 20 minutes at 350 degrees. Remove from oven. Sprinkle with cilantro and let sit for a few minutes before serving.
