1 tablespoon Dijon mustard
1 tablespoon minced shallots
1 1/2 teaspoons salt
Freshly ground pepper to taste
3/4 cup balsamic vinegar
2 1/4 cups olive oil

Directions:
Directions:
Whisk mustard, shallots, salt, pepper and balsamic vinegar in a
medium bowl. Add olive oil in a fine stream, whisking constantly
until emulsified. Whisk before adding to salad if vinaigrette
separates while standing.

Makes 10 servings.
