Pineapple Cheesecake Recipe

24 graham crackers, crushed
5 tbsp. butter, melted
2 tsp. sugar
2-8oz. packages cream cheese
2 unbeaten eggs
1/2 cup sugar
1 teaspoon vanilla
2 cups well drained crushed pineapple
1/4 teaspoon cinnamon
Few drops of lemon juice

Mix first three ingredients together and line springform with
crumb mixture,
saving out a few for the top. Combine and mix well remaining
ingredients and pour mixture in prepared crust and
bake 30 minutes at 375 oven or until inserted
toothpick comes out clean. Let cool on wire rack for 1 hour.
Then spread with 1 pint of sour cream. Chill in pan for several
hours. When ready to serve, run clean knife around the
edges of pan and then remove sides.
