"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
6 eggs
1/3 cup of milk
1lb Sausage
8 slices of American or your favorite cheese
Salt and pepper to taste
1 can of Pillsbury Grand Biscuits
1 or 2 tbsp spoons of flour

Directions:
Directions:
• Brown sausage and set aside.
• Combine eggs, milk, salt and pepper.
• Beat with whisk and scramble over medium heat.
• Remove from heat and mix scrambled eggs and sausage together. Set aside.
• Sprinkle flour on counter and with rolling pin, roll biscuit into 5 or 6 inch circle.
• Break a piece of cheese into 4 pieces place 3 pieces in center of biscuit.
• Spoon 1/8 of egg mixture into center of biscuit. Top with the rest of the cheese slice.
• Pick up 4 sides of biscuit and pinch together until it’s closed around egg mixture. Place pinched side down on baking sheet.
• Continue with the rest of the biscuits. Bake at 375 degrees for 10 – 12 minutes or until golden brown.

There are many possible substitutes. Ham or bacon instead of sausage. Gravy instead of eggs. I’ve stuffed these biscuits with stew, meat and potatoes and pizza stuff. The only limit is your imagination
