Use any vegetables you like but I use the following:
red bell peppers
white wine
lime zest
bay leaves
red pepper flakes
1 large can chopped tomatoes
chicken stock or water
bunch of chopped cilantro
1 avocado, cubed
1 can black beans
juices of limes - you've used for zest
salt and pepper

Dice all vegetables and saute in oil until browned
Add a little white wine and simmer. Add lime zest, bay leaves, red pepper flakes, chopped tomatoes, chicken stock or water and cook for about an hour. Near the end, add the cilantro, cubed avocado, lime juice, black beans and salt & pepper. When serving, top with extra cilantro, shredded cheddar or jack cheese and tortilla strips
