About 15 pounds of meat cooked forever! I use a pot roast
and pork loin roast. Can also use a ham. Season with salt
and pepper and add water.
For sauce: 1 1/4 cup catsup, 5 tablespoons vinegar, 5
tablespoons lemon juice, 5 tablespoons Worcestershire
sauce, 1/2 teaspoon chili powder, 1 chopped onion, 1 cup
green pepper, 3 cloves minced garlic, 3 teaspoon celery salt,
2 cups tomato juice. Simmer sauce for 1 1/2 hours. Simmer
with meat which has been shredded 1 1/2 hours more. Can
add meat stock and additional tomato juice to taste. Serves
30-40 on small cocktail buns. For 75-80 people use 30
pounds
of meat and 175-200 small buns.
