2 C sugar, divided
2 lemons
4 egg yolks
2 heaping Tbl. cornstarch
1 Tbl. butter
1 small flat can crushed pineapple
4 C water, divided
2 pie shells
whipping cream

Directions:
Directions:
Mix 3 C water, 1 1/2 C sugar, juice from 2 lemons and juice from canned pineapple. Bring to a boil. In large pan, make thickening using 2 heaping Tbl. cornstarch, 1/2 C sugar, the 4 egg yolks and 1 C water. Pour hot liquid into thickening slowly, stirring constantly. Return to heat and bring to a boil. Add crushed pineapple and butter. Cool, stirring occasionally and pour into pie shells. Serve topped with whipped cream.
