1 lb. Large Mushrooms
2 tbsp. Butter
1/2 c. Finely Chopped Yellow Onion
1/2 c. Finely Diced Pepperoni
1/4 c. Finely Chopped Green Pepper
1/4 tsp. Pressed Garlic
2 c. Finely Crushed Ritz Cracker Crumbs
3 tbsp. Grated Parmesan Cheese
1 tbsp. Chopped Parsley
1/2 tsp. Salt
1/4 tsp. Oregano
1/8 tsp. Pepper
1 c. Chicken Broth

Wash and drain mushrooms. Remove stems and finely chop. Melt butter in skillet, add onion and saute 5 minutes. Add pepperoni, green pepper, garlic, and mushroom stems. Cook vegetables and meat 10 minutes until tender but not brown. Add cracker crumbs, cheese, parsley, salt, oregano, and pepper. Mix well; stir in broth. Spoon stuffing into the mushroom caps, rounding the tops. Place mushrooms into a shallow pan with a little water in the pan. Bake 25 minutes at 325 degrees.
