1 baguette
2 ripe tomatoes
1 red onion
1 bunch fresh basil
3-4 fresh mozzarella balls (depending on size)
1 cup balsamic vinegar
2 tbsps. capers (optional)

Directions:
Directions:
Finely chop the tomatoes, onion, mozzarella balls, and basil and put them in a bowl. Do the same with the capers if desired. Add the balsamic vinegar and mix thoroughly. Place bowl in fridge. Cut the baguette into slices about 3/4 inch thick. Place the slices on a sheet pan and bake at 350 degrees until they are crispy and slightly golden brown. Allow them to cool and scoop about 1 tablespoon of the toppings on top of the crostini and serve.

The key to this recipe is to always use fresh basil and not dried basil, and make sure that the tomatoes, onion, and mozzarella are chopped consistently the same size.
