1-1/4 c. (2-1/2 sticks) margarine (softened)
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1-1/2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt (optional)
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
3 c. Quaker Oats (quick or old fashioned, uncooked)

Directions:

Heat over to 375º. Beat margarine and sugars until creamy. Beat in egg and vanilla. Add combined flour, baking soda, salt and spices; mix well. Stir in oats. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 8 to 9 min. for a chewy cookie, 10 to 11 min. for a crisp cookie. Cool 1 min. on cookie sheet; remove to wire rack.
