1 lb uncooked boneless, skinless chicken breasts, cubed
3 c. fat-free chicken broth
3/4 c. water
1 1/2 c. uncooked rice
4 oz. smoked turkey sausage (like Hillshire)
1/2 c. celery, thinly sliced
1/2 c. onion, chopped
1/2 c. green pepper, diced
2 tsp. Cajun Seasoning
2 garlic cloves, minced
1/8 tsp. hot sauce, optional
1 bay leaf
1 14.5 oz can diced tomatoes, undrained

1. In a large nonstick skillet, saute chicken 2 to 3 minutes.
2. Stir together remaining ingredients in crock pot/slow cooker.
3. Add sautéed chicken.
4. Cover. Cook on high for 6 hours.

This recipe is simple and tasty and makes the house smell terrific when you come home from work. We are not huge crock pot cooks, but this recipe warrants pulling it out of the garage.
