Pumpkin Cake
4 eggs
1 1/2 cups sugar
1 cup oil
1 15-1/2 ounce can pumpkin
2 cups flour
1 teaspoon (each) baking soda & salt
2 teaspoons (each) baking powder & cinnamon

Fluffy Frosting
1 small box instant vanilla pudding
1 1/2 cups milk
4 ounces cool whip

Directions:

Mix all ingredients for cake together until well blended and pour into UN-greased 10x15 pan. Bake at 350 for 20-25 minutes. Refrigerate right after you take it out of the oven. When cake is cold, spread with frosting (below) and sprinkle with nutmeg.

Fluffy Frosting
Mix pudding and milk together, fold in cool whip, let sit 2-3 minutes, then spread on cake. Keep cake in refrigerator.
