Cool Cucumber and Cilantro Soup Recipe

1 tbsp. butter
1/2 medium onion, chopped
2 medium cucumbers, peeled, seeded, and thinly sliced
14.5 oz. can of chicken broth
1/2 tsp. salt
1/4 tsp. white pepper
1 jalapeņo pepper, seeded and minced
1/2 cup fresh cilantro leaves, minced
1 tbsp. fresh lime juice
1/2 cup sour cream

1. In a large saucepan over medium heat, melt butter.

2. Saute onion in butter until just soft (3 minutes).

3. Add cucumbers and cook until transparent (5-6 minutes).

4. Add broth, bring to a boil, reduce heat and cover and simmer for 5 minutes.

5. Remove from heat and let cool.

6. Transfer soup to blender and puree until smooth.

7. Add salt, pepper, jalapeņo, cilantro, and lime juice to blender until combined.

8. Pour all into a large container, add sour cream and whisk until smooth.

9. Chill at least 4 hours.

Garnish with minced cilantro or cherry tomato halves.
