3C whole milk, 1/3 c white sugar, grated zest of one lemon, 1/2 c long grain rice, 2 egg yolks, slightly beaten, cinnamon to sprinkle

Directions:
Directions:
Place milk, sugar & lemon zest in heavy saucepan. Bring to boil, stirring till sugar melts.
Reduce heat to low add rice (if using raisins add them here) Cover pan & cook till most of milk has been absorbed (about 25 /30min.) Add egg yolks
stirring well & cook for another 2-3 minutes till mixture thickens. Spoon into 4 serving glasses & cool.
