3 lbs. yellow squash, cooked and mashed
1/2 c. chopped onion, 1 T sugar, 1 tsp. salt
1/2 tsp. pepper, 2 eggs, slightly beaten
1/2 stick butter, 1/4 c grated Parmesan cheese


Directions:

Mix first six ingredients together and place in casserole dish. Dot with butter and sprinkle with grated cheese. Bake in a 375º oven for one hour.

This is an easy and tasty way to eat your veggies. I would probably leave off the salt but otherwise it is also a healthy way to prepare squash.
