1 cup all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
1 tbsp baking powder
1/4 tsp salt
1/2 tsp ground red pepper
2 eggs
1 cup milk
1/4 cup margarine or butter, melted
1 cup shredded smoked cheddar cheese

Directions:

1. In a medium mixing bowl stir together flour, cornmeal, sugar, baking powder, salt, and red pepper. In another bowl beat together eggs, milk, and melted margarine or butter. Add to flour mixture. Add the 1 cup shredded cheese and stir just until batter is smooth (do not overmix).

2. Spoon batter into greased muffin cups, filling cups almost full. Top with desired toppings. Bake at 425 for 12 to 15 minutes or until golden brown.

3. Let cool in pan for 5 minutes. Remove from muffin cups and serve warm.
