Mixed Greens with Walnuts and Roasted Onion Dressing Recipe

2 large onions

1c. olive oil

1T. sugar

1/2c. chicken broth

6T. Sherry wine vinegar (William Sonoma)

14C. mixed greens

1C. chopped walnuts

1/2 small red onion

Salt and pepper

Directions:
Directions:
Peel onions and cut into 8 wedges.

Place onions cut side down on baking sheet and drizzle with 2T. olive oil and 1T. sugar.

Bake onions at 400 degrees for 20 minutes.

Turn onions over and bake until brown and carmelized, about 30 minutes. Cool.

Put onions in a food processor and add olive oil, broth and vinegar. Puree.

Season with salt and pepper.

In saute pan add walnuts and saute over medium heat until toasted, about 3 minutes.

Cut red onion in half and thinly slice.

Combine greens, 1/2c. walnuts, half red onion and enough dressing to coat the greens. Toss well.

Sprinkle the remaining walnuts and red onion over the plated salads.
