1 lb. extra sharp cheddar cheese
1/4 cup chopped onion (optional)

Directions:
Preheat oven 350 degrees. Boil 1 lb. elbow macaroni for 6-8 minutes, drain well. While boiling, shred a pound of extra sharp cheddar cheese (unless using pre-shredded). Transfer cooked macaroni into corningware or oven-safe dish.

Add 16 oz. can of tomato sauce and mix well. Mix in most of the cheese - depending on how cheesy you want it. Sprinkle remaining cheese over the top (make sure there's a good thick layer) and bake for 30 - 40 minutes covered and 15 minutes uncovered.

Personal Notes:
This is my Papa's recipe that everyone in my family absolutely loves. I like it best without onion but if you want a variation, adding 1/4 cup onion is always an option.
