2 tsp. pepper
1 tbsp. garlic powder
3 tbsp. Creole seasoning
1 tbsp. cayenne powder
1 tbsp. cumin
1 tbsp. Worcestershire sauce
8 lb. baby back ribs
1/3 cup water or beer
18 oz. Sweet Baby Ray's BBQ Sauce (or take your chances with a lesser brand)

Combine the first six ingredients, mix well. Cut ribs in 4-5 rib sections. Rub seasoning mix generously into top side of ribs and dust bottom side with Creole seasoning. Place in large basting pan, top side up. Add liquid to the pan and cover tightly with foil. Bake ribs at 275 for 3 1/2 to 4 hours. Finish cooking on the grill, 15 minutes per each side. Sauce up the ribs and continue cooking 15 minutes per side until they are to your liking.
