Vinaigrette:
2 1/2 T. orange juice
1 T. wine vinegar
2 1/2 T. olive oil
1/4 tsp. ground black pepper
1/2 tsp. salt

Salad:
2 c. fresh baby spinach
1/2 c. sliced mushrooms
1/2 c. thinly sliced red onion

Vinaigrette:
Combine orange juice and vinegar in a shaker. Add oil, pepper, and salt. Shake. Pour over mixed greens and toss with mushrooms and red onion.
