4lb fryer
fresh herbs(rosemary, oregano, basil, sage)
1/2 medium onion peeled
favorite seasoning(a tablespoon or 2)
1 can of beer
Beer can chicken holder (inexpensive-purchase at home depot. Makes for easy grilling)

Directions:
Set grille on medium high heat, only on one side for indirect cooking. The same can be done with coals. Rinse fryer. Pour out or drink about 1/3 of beer and place beer can with remaining beer in holder. Set holder with beer on disposable aluminum pan. Stuff fryer with herbs, set over beer can and push 1/2 onion into top of fryer. Sprinkle with seasonings, insert pop up timer.
Cover top of fryer with aluminum foil to prevent top from over cooking.
Cooking time is approximately 1 hour 15 minutes. This also makes a tasty gravy. be creative with it.

This is a family favorite for a our Monday visits to the Ricky-LeeAnn LoCicero family in Gainesville, Georgia. We all share in the cooking and car-pooling responsibility ( Eli to tennis, Tucker to cross-country running, Paulina to tennis and piano, and Mary Elle to competitive cheerleading).
When we finally sit down to eat, Paulina directs the family discussion at the table with "Table Topics" cards. This leads to intimate conversation about life's issues. Right along with Lita's interest in counseling.

We top the evening off with a single malt scotch tasting. Kids not included.
