Bread - Amish Friendship Recipe

To make bread:
1 cup Starter (see below)
3 eggs
1 cup oil
1/2 cup milk
1 cup sugar
2 teaspoons cinnamon
1/2 teaspoon vanilla
1/2 teaspoon salt
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup pecans, chopped
1 cup raisins or craisins
1 large box vanilla instant pudding (optional)

1/2 cup brown sugar
1 1/2 teaspoon cinnamon

To make more Starter:
Do not use any type of metal bowl or spoon for mixing! Do not refrigerate. Release air from bag. It is normal if batter rises, bubbles and ferments.
This is a 10 day process. When complete may freeze Starter in 1 cup batches. Add Starter to a gallon zip-lock bag.
(May add only 1/4 the amounts on Day 6 if you want less Starter and it will make 2 loaves at the end of the 10 days, plus 1 cup of starter).
Day 1 - Do nothing (Make sure bag is dated)
Day 2 - Mush the bag
Day 3 - Mush the bag
Day 4 - Mush the bag
Day 5 - Mush the bag
Day 6 - Add to bag: 1 cup flour, 1 cup sugar, 1 cup milk. Mush the bag. (May add 1/4 cup or 1/2 cup of all ingredients)
Day 7 - Mush the bag
Day 8 - Mush the bag
Day 9 - Mush the bag
Day 10- Mix and divide the Starter
Pour the entire contents into a NON-METAL bowl. Add 1 cup of flour, 1 cup sugar, and 1 cup milk. Measure out 4 separate gallon zip-lock bags. Keep 1 for yourself and give the other 3 to friends with a copy of this recipe or you may freeze in 1 cup measures for later use. Frozen Starter will take at least 3 hours at room temperature to thaw before using.
Note: May add 1/4 the amounts on Day 6 and it makes 2 loaves at the end of the 10 days, plus 1 cup of Starter).

Grease 2 large loaf pans. Dust the greased pans with the Topping mix of brown sugar and cinnamon.
Mix wet ingredients and sugar. Mix dry ingredients and then combine with wet ingredients. Pour batter into 2 greased pans and bake at 325 degrees for 1 hour. Cool until the bread loosens from the pan (about 10 minutes). Turn out on serving dish.
