3 c. sugar
1 c. shortening or butter
2 tsp. vanilla
4 eggs
3-1/2 c. flour
2 tsp. baking soda
1/4 tsp. salt
1/2 c. buttermilk
6 ripe bananas, mashed
1 c. pecans, chopped

Directions:
Directions:
Preheat oven to 325º. Beat together sugar, shortening (or butter) and vanilla. Add eggs one at a time. Sift together flour, baking soda and salt. Add to sugar mixture alternating with buttermilk. Add bananas. Fold in pecans. Bake in 2-3 loaf pans (depending on size) for 1 hour & 10 minutes or until golden brown.
