Remove leaves from celery stalks (could use in stuffing or soup). Clean and cut celery into 2 to 3 inch pieces—as much as need for size of gathering. Grate sharp cheddar cheese into a bowl. Add mayo mixing in well to desired consistency. Add a bit of mustard for color/taste. Fill celery pieces and sprinkle with paprika. NOTE: Make cheese mixture a bit dry to prevent sogginess from developing if storing in the fridge or cold food room. Also can cut celery and make cheese mixture storing separately, filling until just before serving.

Note by Editor; This was added two times, and is served at every family holiday meal. It wouldn't be Thanksgiving or Christmas without it.

I will never forget the first time I went to Thanksgiving dinner at the Roylance's before I got married. I asked what I could bring and they said "stuffed celery". At my house, we would serve celery with cream cheese, peanut butter, or a cheese spread. I sure got funny looks when I brought in my tray filled with a verity of different "stuffed celery". No one wanted to say anything, but at Christmas I "learned" what stuffed celery meant at a Roylance holiday meal. Never made that mistake again. Pat
