2-1/2 whole wheat flour
1 c quick or old fashioned oats
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 c butter or margarine softened
2 c firmly packed brown sugar
1 egg slightly beaten
1 tsp vanilla
1 c canned pumpkin
1 raisins or chocolate or peanut butter morsels
Nuts, if desired

Directions:
Directions:
Mix flour, cinnamon, soda and salt together. Add oats. Cream brown sugar, margarine, egg and vanilla together. Add pumpkin to creamed mixture then all to the dry ingredients. Add raisins and nuts if desired. Drop on lightly greased cookie sheet and bake at 350 for 15 to 17 minutes.

We love this cookie! Good way to use extra pumpkin if you purchase a large can and only want to make one holiday pumpkin pie instead of two. With any cookies we make up the whole batch, eat a couple a piece, then freeze the rest taking out a few as the craving for a sweet hits so we don’t over indulge at one time.
