1 green or white Pumpkin
Salt
1 small Onion
1 tbsp. Margarine
1 tbsp. Paprika (or more to taste)
2 tbsp. Flour
1/2 pint Sour Cream

Directions:
Directions:
Peel and clean out the Pumpkin. Grate the pumpkin using the large holes. Salt the grated pumpkin and let sit for 15-30 minutes; squeeze out the moisture.

In a medium soup pot over medium-high heat, brown the onion in the margarine. Add the grated pumpkin, sprinkle with Paprika. Add enough water to cover.

Bring to a boil on High, and then reduce heat to Medium. Cook until pumpkin is tender, 10-15 minutes.

Meanwhile, add the flour to the sour cream and mix thoroughly.

Reduce heat to Simmer, and add the sour cream mixture. Simmer for at least 5 minutes before serving.
