Shrimp Scampi Recipe

2 -3 lbs.peeled & de-veined med. shrimp (Tails on)
2 T. minced garlic
garlic powder
1 onion diced
1 cube (plus) butter
zest of 1 lemon
juice of lemon
sliced mushrooms
salt & pepper

Toss & coat shrimp with 1/2 cube melted butter, minced garlic, & juice & zest of lemon.
Refrigerate until ready to cook.

Preheat broiler & cook onions in 1/2 cube melted butter.
Add shrimp & broil 2 min,
Stir & cook 2 min more.
Add mushrooms & additional butter if desired.
Sprinkle with garlic powder, salt , pepper & paprika.
Broil until mushrooms are cooked & shrimp is done.

Serve with wild rice pilaf.

This can be broiled in individual ramekins for a formal & intimate dinner.

I sometimes saute the shrimp & add par-boiled tri color cheese tortellini & zucchini for variation.
