2 c. flour
2 tsp. baking powder 1/2 tsp. salt
1/2 c. shortening
1/2 c. margarine
3/4 c. white sugar
1 egg
1 tsp. vanilla
2 c. grated carrots
1/2 c. Grape-Nuts
Frosting:
1 Tbsp. butter
2 c. sifted powdered sugar
1 tabl c. orange juice
1 Tbsp. grated orange peel
1/2 c. orange juice

Directions:
Directions:
Beat well and cream together shortening, margarine, and sugar. Add egg. Mix flour that has been sifted with soda and salt. Add carrots and Grape-Nuts; mix until just blended. Bake on greased cookie sheet for 20 to 25 minutes at 350. While warm, frost.
Frosting directions: Mix all to smooth.
