Italian Sausage (mild or hot)
1 cup chopped onion
2 cloves crushed garlic
5 cups beef broth
28 oz can of diced tomato
1 cup sliced carrots
1 cup green beans (can be canned)
1/2 tsp. oregano
1/2 tsp basil
8 oz tomato sauce
1 1/2 cup sliced zucchini
1 2/3 cup of sliced yellow squash
2 Tbs. parsley
1 medium green pepper, cut up
1 pkg. cheese garlic tortellini (diGiorno)
Parmesan Cheese

Directions:
Directions:
First brown sausage (removed from casings) and drain.
Saute onion, garlic and pepper.
Add broth, meat and everything but zucchini and squash and tortellini.
Boil and simmer for 30 minutes.
Add zucchini, squash and tortellini and simmer for 20 minutes.
Top with Parmesan cheese and serve.
