2 c. sifted flour
2 Tbs sugar
3 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs, beaten well
3 Tbs melted butter
3 c. buttermilk

Sift first five ingredients three times. (No kidding on sifting three times! This is part of the secret that makes these pancakes so light and fluffy.) Whisk next three ingredients in a separate bowl. Combine dry and wet mixtures all at once. Do not over beat. If there are some lumps left, it's okay. When the batter cooks it'll smooth out and you won't taste it.

Heat a lightly oiled griddle over medium high heat. Note: You don't want too much fat on the griddle or you'll be frying the pancakes. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides. Serve hot with butter and warm maple syrup.

These are the lightest pancakes I have ever had. The recipe has been in my brother-in-law's family for years. I was introduced to it one Christmas morning and have been hooked ever since.
