Pumpkin Bread Recipe

2/3 c. pumpkin
1/2 tsp. cinnamon
1 c. sugar
1 tsp. baking soda
3/4 c. flour
3 eggs

8 oz. cream cheese
3/4 tsp. vanilla
1/2 c. sugar

Beat first 6 ingredients together. Line two 9x11 pans with wax paper - spray with cooking spray. Pour half of the mixture onto each pan and bake (one at a time) at 350 for 8-10 minutes.

Let cool for a few minutes after removing from oven. Take wax paper out of pan, lay bread side down on powdered sugar-covered dish towel and roll up. Let cool a few minutes.

While cooling; beat filling ingredients until creamy. Un-roll pumpkin breads. Spread 1/2 filling over each, roll back up and cover with saran wrap. Chill until ready to serve.
