2 T unflavored gelatin
1/2 c cold water
2 c unsweetened pineapple juice
1 c sugar
1 c grated mild cheddar cheese
1/2 pint whipping cream, whipped without sugar

Directions:
Directions:
Dissolve the unflavored gelatin in the cold water and set aside. Bring the unsweetened pineapple juice and sugar to a boil then remove from heat. Add the gelatin mixture. Cool until it begins to thicken. Add the grated cheese. Fold in the whipping cream. Pour into serving dish. Put in refrigerator and set until firm. Cut into serving sized portions.
