4 c frozen huckleberries
1 c sugar
4 T minute tapioca*
2 T butter
2 unbaked pie shells

Directions:
Directions:
Mix the ingredients for filling and let set up while making two crusts for 9” pie. Pour filling into 9” pie shell. Dot with 2 tbsp butter or margarine. Place top crust on. Make slits for ventilation. Cover edge with foil strip. Bake at 425 for 20 minutes. Reduce heat to 350 for 15 minutes.

* This recipe, using tapioca as the thickening agent, requires no defrosting and stovetop preparation at all. The theory is more juice is retained in the berries if baked while frozen.
