˝ cup sunflower kernels
˝ cup slivered almonds’
2 Tbl butter
˝ cup Oil 3 Tbl cider or red wine vinegar
1 Tbl lemon Juice
2 teas sugar
˝ teas salt
˝ teas ground mustard
1 garlic clove, minced
4 cups torn leaf lettuce
1 can mandarin oranges, drained
1 ripe avocado, peeled and cubed
1 to 2 green onions, chopped

In a small skillet, sauté sunflower kernels and almonds in butter. Cool, meanwhile, in a jar with tight-fitting lid, combine the oil, vinegar, lemon juice, sugar, salt, mustard, and garlic; shake well. In a large salad bowl, toss the lettuce, oranges, avocado, onions, and sunflower kernel mixture. Drizzle with dressing. Serve immediately, Yield: 6 to 8 servings.

Jessie and I made this the first time at an Easter dinner we made together. Going through cook books and cooking magazines with Jessie, trying to find new recipes we hadn't tried, has become some of my fondest memories. We both love looking and talking about what we could do "just a little" different to make the recipe our "own". Finding this recipe while doing this cookbook brought back all those happy memories. It was worth all the work just to have that!
