1.5 lb. shoulder or leg of mu
1 carrot, chopped
1 parsnip, chopped
1/2 celery root, chopped
1 onion, chopped
1/2 c. bacon
3 c. water
Salt to taste
2 cloves garlic, crushed
Dash of pepper
Dash of paprika
1/4 tsp. marjoram
1/4 tsp. caraway seeds
1 c. kale, cut in strips
1 c. cut green beans
1 lb. red potatoes, peeled and quartered

Directions:
Directions:
Saute carrot, parsnip, celery root, and onion with bacon.

Add meat, sprinkled with salt, and 1 cup water. Cover and simmer for 1.5 hours.

Add seasonings, kale, beans, and potatoes, and the remaining water. Cover and simmer for 30 to 45 minutes longer.
