1 c shortening or butter, 2 c sugar, 3 eggs well beaten, 4 c flour, 1 c mincemeat, 1 t baking soda, 1/8 t ginger, 1 t cloves, 1 t nutmeg, 1 t salt, 1/2 c chopped nuts

Directions:
Directions:
cream shortening and sugar well. add the beaten eggs and cream well. add 1 c of the flour and beat together. Add the mincemeat and fold into creamed mixture. sift remaining dry ingredients and gradually add to the mixture, mixing well between additions. fold in chopped nuts. drop by teaspoon onto parchment paper lined cookie sheet. Bake at 350 for about 12 minuets.

these are a soft and chewy cookie with an almost cake like texture.
