3 Tbsp. Olive oil heated
2 Tbsp Fine Chopped Onions, 2 cloves miced garlic
1/2 tsp. ground oregano, 1/4 tsp. ground cumin
dash of Ground Bay Leaves and Pepper
1/8 tsp. salt, 2 Tbsp. lime juice
2 Tbsp. water, 1 Tbsp. Sherry, 1/2 Tsp Vinegar

Directions:
Directions:
Mic Onion and Garlic with spices, salt and pepper in bowl, then ad to pan with heated Olive oil. Cook until onion becomes translucent, add juice, water, wine and vinegar. Simmer 5 minutes. Allow to cool slightly before serving.
