Ingredients Amounts for serving 1 gallon
4 Sweet Potatoes, peeled and rough cut
1-1/2 lbs Yellow Onions, peeled, and rough cut
2 Leeks, cleaned and rough cut
1 quart Chicken Stock
1 quart Heavy cream
Salt and Pepper to taste
Butter and brown sugar
3/4 c butter and 1/4 c brown sugar
1/4 teas to taste Cinnamon

Method,
1. In skillet, cook sweat onions and leeks in butter until translucent.
2. Add the potatoes and chicken stock, season with salt and pepper, simmer 1 hour.
3. Add the heavy cream and puree. .
Add brown sugar and cinnamon, adjust the seasoning.
