1 lb. Flank steak (lean)
2 qt.s water, 1 chopped carrot, 1 chopped onion
4 cloves crushed garlic, 1/2 sliced green pepper,
1 1/2 cup Sofrito (See recipe)
1/2 beef broth, 1 Tbsp. dry sherry
1/3 cup cooked sweet peas, 2oz pimento strips

Boil meat in lg. pot w/ 2 qt.s water, add carrot, onion,garlic,bell pepper. cook 15 mins med-hi heat. reduce to med-low, cook covered for 2 hrs or until meat is tender and done. Remove meat and allow to cool, then pound the meat until you have thick string like strips. Place frayed meat in pan with sofrito, broth, cooked carrots, wine and peas. Salt to taste and cook for about 5-10 minutes. Pour in juice from pimentos, add a few pieces cut into strips and mix. Serve on platter with remaining pimento strips placed on top as garnish. Accompany with white rice, fried sweet plantains and black beans.

First Lala, and later Aunt Rita, used to make this on Sundays for the after church family dinner. My sister and I would fight over which of us would get to stay for the great fun of a meal and a Sunday afternoon with Rita and Lala.
