1 bunch carrots (peeled and cut on the diagonal)
4 tbsp. melted butter
1/4 c brown sugar
11/2 tsp. ground ginger

Directions:
Directions:
Cook carrots until tender. Mix butter sugar and ginger in frying pan. When melted together add drained carrots. Cook over low heat for approximately 5 minutes.
Variation instead of the ginger use 1/4 c of triple sec.

You can double the recipe but I don't think you have to totally double sauce. Half of it should be ample for 2 bunches of carrots.
